Ailsa Craig vormt zeer grote, bolronde uien, tot vaak wel ruim 1 – 1,5 kg. De smaak van deze ui is mild tot lekker licht zoet. De uien zijn ook redelijk lang bewaarbaar. Dun zaaien direct in de vollegrond op regels en het zaad goed af-dekken. De grond continu vochtig houden. Na opkomst niet al teveel uitdunnen. De uien oogsten als het loof is afgestorven. Uien en loof ongeveer 1 week op het veld laten nadrogen.
